Spring bowl with asparagus, herbs & cabbage

Hello Spring! Here comes a suitable bowl for you: Green asparagus couscous, radishes with Love Craft Kraut Garlic & Pepper, a dip with fresh herbs, hummus and - who likes an egg.⁠

Ingredients for 2 people

1 bunch of green asparagus, washed, ends trimmed and cut into bite-sized pieces⁠

75 couscous (here chickpea couscous)⁠

2 tbsp olive oil⁠

1 bunch of radishes, cleaned and sliced⁠

2 spring onions, washed and cut into rings⁠

2 handfuls of fresh herbs (e.g. parsley, wild garlic, chervil), chopped⁠

1 serving of hummus (homemade or store bought)⁠

4-6 tbsp SUUR Love Craft Herb Garlic & Pepper⁠

For the dip:⁠

150 g (vegan) quark or sour cream⁠

To taste: salt, pepper, lemon juice⁠

optional: 2 eggs⁠

Heat olive oil in a pan and sauté the asparagus for about 7-10 minutes over medium heat. Salt and pepper and set aside.⁠ ⁠

Prepare the couscous according to the package instructions and let it cool down a bit⁠. Then mix with the asparagus, radish slices and 1-2 tablespoons chopped herbs and season.⁠ ⁠

optional: Boil the eggs until they are soft.⁠ ⁠

Serve asparagus couscous, cabbage, hummus, dip and optional eggs. Sprinkle with herbs.⁠ ⁠
