Hello Spring! Here comes a suitable bowl for you: Green asparagus couscous, radishes with Love Craft Kraut Garlic & Pepper, a dip with fresh herbs, hummus and - who likes an egg.
Ingredients for 2 people
1 bunch of green asparagus, washed, ends trimmed and cut into bite-sized pieces
75 couscous (here chickpea couscous)
2 tbsp olive oil
1 bunch of radishes, cleaned and sliced
2 spring onions, washed and cut into rings
2 handfuls of fresh herbs (e.g. parsley, wild garlic, chervil), chopped
1 serving of hummus (homemade or store bought)
4-6 tbsp SUUR Love Craft Herb Garlic & Pepper
For the dip:
150 g (vegan) quark or sour cream
To taste: salt, pepper, lemon juice
optional: 2 eggs
Heat olive oil in a pan and sauté the asparagus for about 7-10 minutes over medium heat. Salt and pepper and set aside.
Prepare the couscous according to the package instructions and let it cool down a bit. Then mix with the asparagus, radish slices and 1-2 tablespoons chopped herbs and season.
optional: Boil the eggs until they are soft.
Serve asparagus couscous, cabbage, hummus, dip and optional eggs. Sprinkle with herbs.
