Summertime! We have a really refreshing recipe for you! Watermelon, mint with hearty cabbage and (vegan) feta... what sounds more like a barbecue and picnic?
For a smaller bowl
1/2 watermelon, cut into approx. 1 cm cubes
100 g (vegan) feta
1 small red onion, peeled and cut into thin rings
2 sprigs of fresh mint, leaves picked (set aside a few leaves for decoration)
2 tablespoons SUUR Love Craft Kraut Garlic & Pepper or SUUR Kraut Deluxe
2 tablespoons olive oil
1 tbsp apple cider vinegar
1 tablespoon lemon juice
1 tsp medium hot mustard
1 tsp maple syrup (or more to taste)
For the dressing, mix all the ingredients except for salt and pepper in a screw-top jar. Season with salt and pepper. Set aside
In a bowl, mix the melon, onion rings, SUUR cabbage and mint with the crumbled feta and fold in the dressing. Decorate with the remaining mint leaves. Voila!
